Wasabi

Wasabi is a challenging but rewarding perennial plant, famous for its pungent rhizomes used to make the distinctive Japanese condiment. It forms a rosette of heart-shaped leaves, growing to about 30-45cm tall and wide. Wasabi is an H3 hardy plant, requiring very specific growing conditions: cool, consistently moist, shady conditions, ideally next to a clean water source, mimicking its natural riverbank habitat. It thrives in partial to full shade and rich, consistently moist, well-drained soil. The plants take 18-24 months to produce a harvestable rhizome. The leaves and stems are also edible, offering a milder wasabi flavour. While it's a niche crop, successfully growing wasabi is highly rewarding and adds a unique element to a UK garden, especially in a shady, damp spot.
