Dandelion
Common Dandelion, often seen as a weed, is a versatile and nutritious edible plant. Its young leaves can be used in salads, offering a slightly bitter, peppery flavour. The roots can be roasted for a coffee substitute, and the flowers are edible. It forms a low-lying rosette, sending up flower stalks to 30cm. Bright yellow flowers appear almost year-round. It is incredibly hardy and adaptable, growing in full sun to partial shade and a wide range of soils. H7. A prolific native plant with significant wildlife value, providing early nectar for pollinators.
