Crosnes
Crosnes, also known as Chinese Artichoke, is a unique perennial vegetable grown for its crisp, white, segmented tubers with a delicate, nutty flavour. The plant produces upright stems with mint-like leaves, reaching 30-50cm in height and spreading readily. Inconspicuous purple flowers may appear in late summer. Crosnes thrive in a sunny to partial shade position and moist, well-drained soil. H5. Best harvested in autumn/winter, these small tubers are excellent raw in salads or lightly cooked.
