Potato 'Pink Fir Apple'
A classic Victorian heirloom variety, 'Pink Fir Apple' is a late maincrop potato that has maintained its popularity due to its unique appearance and superlative flavor. It produces long, knobbly, pink-skinned tubers with firm, waxy yellow flesh. The taste is distinctly nutty and it is widely considered one of the best salad potatoes available. Because of its irregular shape, it is usually cooked whole in its skin, then peeled or enjoyed as is. The plants have a somewhat sprawling, vigorous habit and show good resistance to common scab. As a late maincrop, it requires a long growing season and should be planted in April for a harvest in September or October. It is essential to earth up the plants regularly to protect the developing tubers from light and frost. While the knobbly shape can make them a bit more work to clean, the culinary rewards are well worth the effort. They store well but are at their best when used relatively fresh.
