Scorzonera hispanica 'Hoffman's Schwarze Pfahl' is a highly regarded salsify relative, producing long, slender, black-skinned roots with pure white, sweet flesh that tastes somewhat like asparagus or artichoke. This hardy perennial, typically grown as an annual or biennial, reaches a height of 60-90cm and produces yellow, dandelion-like flowers in its second year. It thrives in full sun with deep, light, stone-free, well-drained soil. Sow in spring for harvesting from late autumn through winter. The roots are excellent cooked and are a less common, yet very rewarding, vegetable. RHS hardiness rating H6.
