Winter Savory 'Bolero'

'Bolero' is a refined and particularly aromatic cultivar of Winter Savory, a hardy, evergreen sub-shrub that is a staple of traditional herb gardens. Unlike the annual Summer Savory, 'Bolero' provides a year-round presence with its dark, glossy, needle-like leaves. It has a compact, spreading habit, forming a neat mound that is perfect for the front of a border or a rock garden. The leaves have a strong, peppery, and resinous flavour that is often compared to a cross between thyme and marjoram, and they are traditionally used to season beans and pulses. In late summer, the plant is covered in a cloud of tiny, white or very pale lilac flowers that are a favourite of honeybees. It is a very tough and hardy plant, well-suited to the UK climate, provided it is grown in full sun and very well-drained soil. It is particularly drought-tolerant once established and benefits from a light pruning in spring to keep it from becoming too woody.
