French Sorrel 'Silver Shield'

Rumex scutatus 'Silver Shield' is a visually striking and high-yielding perennial herb, widely considered superior to common sorrel for culinary use in the UK. This cultivar is noted for its beautiful shield-shaped, silver-green leaves that remain tender and succulent throughout the growing season. It has a low, sprawling habit, rarely exceeding 30cm in height, and is less prone to bolting than other varieties. The leaves have a delicate, lemony tang that is essential for the classic French 'soupe aux herbes' or as a sharp accompaniment to oily fish like salmon. It is very easy to grow, thriving in most well-drained soils and tolerating partial shade better than many other herbs. It is fully hardy (H7) and will reappear reliably every spring. Removing flower spikes as they appear encourages the production of new leaves. It is also an attractive ornamental plant for the front of a border.
