Summer Squash / Pattypan 'Sunburst'
'Sunburst' is a vibrant and highly productive yellow pattypan squash that is both ornamental and delicious. The plants have a compact, bush-like habit, making them ideal for smaller UK gardens or even large containers where trailing varieties would take up too much room. They produce an abundance of bright yellow, scallop-edged fruits with a distinctive green ring at the blossom end. For the best culinary results, the squash should be harvested when they are tiny 'baby' vegetables (about 5-8cm across); at this stage, the flesh is buttery, tender, and sweet. They are excellent when lightly sautéed, steamed, or roasted whole. If left to grow larger, they can be stuffed. 'Sunburst' is an early maturing variety, often producing fruit within 50-55 days of sowing. It requires a warm, sunny, sheltered spot and plenty of water and nutrients to sustain its prolific production through the summer months. Like all summer squash, it is frost-tender.
