Kale 'Scarlet'
'Scarlet' is an extraordinarily ornamental and edible variety of kale that provides brilliant color to the winter vegetable garden. It produces deeply frilled, curly leaves that start dark green and intensify to a rich purple-red as the temperature drops. This color change is triggered by frost, which also improves the flavor by increasing the sugar content. The plants are extremely hardy and can withstand the toughest UK winters, providing a reliable source of fresh greens from October through to April. Reaching a height of about 60-90cm, 'Scarlet' is also attractive enough to be grown in flower borders. It is highly resistant to many common pests and diseases that affect other brassicas. The young leaves can be used raw in salads, while older leaves are best steamed or used in stir-fries. It is particularly rich in vitamins A, C, and K, as well as minerals. It requires firm soil and protection from pigeons during the winter months.
