Dill 'Mammoth'
As the name suggests, 'Mammoth' is a large and vigorous cultivar of dill, reaching heights of up to 1.2 metres. It is an annual herb that is essential for any UK kitchen garden, prized for its feathery, blue-green foliage and its large, flat umbels of yellow flowers. The leaves have a unique, tangy flavor that is the perfect accompaniment to salmon, potatoes, and pickles. In the UK, it should be sown directly where it is to flower, as it has a long taproot and does not like being transplanted. It requires a sunny, sheltered spot to prevent the tall stems from being blown over by the wind. The flowers are not only beautiful but are also highly attractive to hoverflies and other beneficial insects. If left to go to seed, the pungent seeds can be harvested for use in baking or pickling. It thrives in a fertile, well-drained soil with regular watering during dry spells.
